Chickpea Salad

Ingredients

  • 1 can of chickpeas

  • 1.5 tbsp of mayo or vegan mayo

  • 2 tbsp diced red onion

  • 1/2 lemon, squeezed

  • 1 celery

  • 1 handful of cilantro

  • pinch of salt, pepper, paprika

  • Base: lettuce of your choice or sourdough bread

  • Toppings: cucumbers and capers
     

Directions

  1. Drain and rinse chickpeas

  2. Add to a bowl and lightly smash

  3. Add mayo, lemon juice, and spices and mix all together

  4. Chop celery, onion, cilantro and add to chickpeas

  5. Taste test and add any additional ingredients if needed

  6. Add lettuce to a bowl and top with chickpea mix

  7. For aesthetic, top with extra cilantro, onions, cucumber and capers
